The Ostra do Sado is cultivated in the Sado Estuary, one of Portugal's most important wetland ecosystems. The estuary's mix of fresh and salt water creates ideal conditions, producing specimens with a distinctive mineral and briny flavour. Oyster farming here dates back to Roman times.
The oysters are typically enjoyed raw with a squeeze of lemon, though they also appear grilled or in seafood rice dishes. They have become a sought-after delicacy in Lisbon's restaurants.
