Torresmo - Portuguese gastronomy

Crispy fried pieces of pork belly, a beloved Portuguese snack served with bread and drinks.

Torresmos are crispy pieces of fried pork, made from belly or fatback cut into cubes and slowly rendered in their own fat until golden and crunchy. They are one of Portugal's most ancient and beloved petiscos.

The tradition is closely tied to the matança. Torresmos are eaten hot, seasoned with coarse salt, sometimes with orange or piri-piri. They also appear crumbled into migas or stuffed into bread rolls.
