Juniper grows wild on the cold plateaus of Trás-os-Montes, where its berries are harvested in autumn. The resinous, slightly sweet flavour makes it an essential seasoning in the region's game and sausage cuisine.
In enchidos production, juniper is used in alheira and salpicão. Juniper aguardente is an ancestral tradition, and Portuguese craft gin producers have launched artisanal gins with national juniper.
