Portugal is one of the world's largest olive oil producers, with the Alentejo region leading production of premium extra-virgin oils.
Azeite is the lifeblood of Portuguese cooking, used for frying, dressing, baking, and finishing dishes. Portugal ranks among the top four olive oil producers globally, with the Alentejo accounting for the majority of output. Native varieties like Galega, Cordovil, and Cobrançosa produce oils ranging from mild and buttery to intensely peppery.
Six Portuguese olive oils hold DOP status, protecting their regional character and production methods. The annual olive harvest between November and January remains a communal event in rural areas. Portuguese cuisine uses olive oil where other traditions might use butter, making it the single most important ingredient in the national kitchen.
