Fatias de Tomar are a conventual sweet from the city of Tomar, associated with the Convent of Christ. The dessert consists of slices of a dense egg yolk mixture, cooked in a bain-marie, then cut into pieces and soaked in a fragrant sugar syrup flavoured with cinnamon. The result is intensely sweet, deeply golden, and custard-soft.
Like many Portuguese conventual sweets, fatias de Tomar use an extraordinary quantity of egg yolks relative to other ingredients. They are a fixture of the city's pastelarias and are particularly sought after during local festivals. The sweet represents the Beiras' contribution to Portugal's unrivalled conventual pastry tradition.
