Linguiça
By João FerreiraAlentejo

A cured pork sausage seasoned with garlic and paprika, a staple found in kitchens from the Alentejo to the Azores.
Linguiça is one of Portugal's most versatile cured sausages, made from pork meat and fat seasoned with garlic, wine, paprika, and sometimes piri-piri. The mixture is stuffed into natural casings and smoked over oak wood.
Linguiça is grilled, added to soups like caldo verde, cooked with rice and beans, or simply sliced and eaten with bread. It also travelled with Portuguese emigrants, becoming a defining ingredient in Brazilian, Goan, and Hawaiian cuisines.
