Presunto - Portuguese gastronomy

Portuguese dry-cured ham, with the most prized examples from acorn-fed black pigs in the Alentejo.

Presunto is one of Portugal's most treasured charcuterie products. The finest comes from the Alentejo, where native black pigs roam oak forests feeding on acorns during the montanheira season. This diet gives the meat its distinctive nutty sweetness and marbled fat.

The curing process takes at least twelve months. Presunto from Barrancos holds PDO status and is considered among the best Iberian hams. It is sliced paper-thin and served as a starter, or used to wrap melon and flavour soups.
