A crescent-shaped fried turnover with a thin crispy shell, most commonly filled with shrimp béchamel.
The rissol is a half-moon shaped fried turnover found in every pastelaria in Portugal. The most popular version, rissol de camarão, features a creamy shrimp béchamel encased in thin dough that is breaded and deep-fried to golden crunch.
Rissóis are a staple of Portuguese snack culture, served as petiscos with beer, at birthday parties, and as quick lunches. A well-made rissol is a test of any cook's skill.
