Toucinho do Céu, literally "bacon from heaven," is a dense, moist cake made primarily from ground almonds, egg yolks, and sugar. Despite its name, modern versions contain no pork fat, though the original conventual recipe did include lard.
The cake has a distinctive golden colour and fudge-like texture. It exemplifies how Portuguese nuns transformed humble ingredients into transcendent sweets, creating recipes that endure centuries after the convents closed.
