An Andean tuber cultivated experimentally in Portugal, valued for its sweet flavour and prebiotic properties.

Yacon is an Andean tuber that has found favourable cultivation conditions in Portugal. Rich in fructooligosaccharides, it is a natural sweetener with a low glycemic index that has attracted interest from consumers and chefs.

Small Portuguese farmers, particularly in the north and centre, have begun cultivating yacon as an alternative crop. In the kitchen, it can be eaten raw in salads, cooked into purées, or transformed into syrup.
