Flor de Sal - Portuguese gastronomy

Delicate hand-harvested salt crystals from the Algarve's traditional salt pans, prized as a finishing salt.

Flor de sal is the finest grade of sea salt, hand-harvested from the surface of traditional salt pans in the eastern Algarve, particularly around Castro Marim and Tavira. These delicate, flaky crystals form only under specific wind and temperature conditions and must be carefully skimmed from the water's surface using traditional wooden tools.

Unlike regular sea salt, flor de sal retains more moisture and trace minerals, giving it a complex, clean flavour and a satisfying crunch. It is used exclusively as a finishing salt, sprinkled over dishes just before serving. Portuguese flor de sal has gained international recognition and is now exported alongside the country's olive oils as a premium artisanal product.
