An Algarve sweet of egg yolk threads wrapped in gold foil, a jewel of southern Portuguese confectionery.
Dom Rodrigo is one of the Algarve's most distinctive sweets, a golden ball of ovos moles (egg yolk and sugar) wrapped in strands of fios de ovos (angel hair egg threads), then encased in shiny metallic foil. Named after a legendary nobleman, the sweet is a confection of remarkable beauty and rich sweetness.
The preparation is labour-intensive, requiring skilled hands to create the delicate egg threads and assemble the final product. Dom Rodrigos are produced by artisan confectioners across the Algarve, particularly in Lagos and Tavira.
