Lagosta suada, literally "sweated lobster," is a preparation where whole lobster is slowly cooked in a covered pot with onions, garlic, tomato, white wine, and a touch of piri-piri. The gentle steam preserves the lobster's delicate sweetness while infusing it with aromatic flavours.
Found in marisqueiras along the Algarve coast, particularly in Olhão, Tavira, and Lagos. The cooking liquid becomes a rich sauce served alongside, often mopped up with crusty bread.
