Ovos Moles
By Silva E. Olhão

Delicate egg yolk and sugar confections from Aveiro, shaped into shells and barrels and wrapped in communion wafer.
Ovos Moles de Aveiro are one of Portugal's most iconic conventual sweets, born in the convents of Aveiro during the 15th century. Nuns used egg whites to starch their habits and created these rich confections to use the leftover yolks.
Traditionally shaped into maritime forms like shells, fish, and barrels, each piece is encased in a thin, crisp communion wafer. Ovos Moles hold PGI status and remain Aveiro's most celebrated culinary export.
