The signature dish of Porto, a hearty tripe and white bean stew that earned residents the nickname "tripeiros."
Tripas à Moda do Porto is Porto's defining dish. Legend holds that when Prince Henry's fleet departed for Ceuta in 1415, the people donated all their meat to provision the ships, keeping only the tripe for themselves. From this sacrifice, a culinary tradition was born.
The dish is a rich stew of various tripe preparations, chouriço, presunto, calf's foot, and white beans, slow-cooked with cumin and sometimes curry powder. It is a point of fierce civic pride, and every portuense family guards its own recipe.
