The carob tree finds ideal growing conditions in the Algarve. The syrup extracted from its pods is a natural sweetener rich in fibre and minerals, with a distinctive chocolate-like flavour.
Once considered food for the poor, carob syrup is now valued as a healthy alternative to sugar and chocolate. Small Algarve producers transform it artisanally into syrup, flour, and liqueur.
