The zambujeira is the wild olive tree that has dotted the Alentejo landscape for millennia. Its fruits, smaller than cultivated varieties, produce an intensely flavoured, bitter, and fruity oil prized by connoisseurs.
Some Alentejo producers have begun marketing zambujeira olive oil as a limited-edition gourmet product. Low productivity and difficult harvesting justify premium prices, but the unique flavour rewards appreciators of exceptional oils.
