Arnaldo Azevedo, born in Porto in 1987, represents a new generation of Portuguese chefs who seamlessly blend tradition with innovation. Growing up in the culinary world, he was literally "born among pots and pans" in his parents' restaurant in Ermesinde, where he began working at just 13 years old, learning the fundamental value of fresh markets and quality ingredients.
His culinary journey led him to take charge of Vila Foz Restaurant at Vila Foz Hotel & Spa in 2019, where his creative and bold approach quickly distinguished the establishment. Under his leadership, Vila Foz earned its first Michelin star in 2021, cementing Azevedo's reputation as one of Portugal's most promising culinary talents.
Azevedo's cooking philosophy centers on infusing "a wealth of Portugal" into his dishes, showcasing the country's rich culinary heritage through a contemporary lens. His menus at Vila Foz demonstrate this vision perfectly: the entirely vegetarian "Novo Mundo" menu and the Atlantic-focused "Maresia" menu, both celebrating Portuguese terroir and coastal bounty with modern techniques and presentation.
Beyond Vila Foz, Azevedo has expanded his culinary influence through Bistrô by Vila Foz in Matosinhos Municipal Market and Restaurante Flor de Lis in Porto, bringing his distinctive Portuguese fusion cuisine to different dining contexts while maintaining his commitment to quality and innovation.
