The Francesinha: Porto's Glorious, Over-the-Top Sandwich
Porto's legendary francesinha is more than just a sandwich—it's a towering monument to Portuguese culinary excess, born from immigrant ingenuity and crowned with molten cheese.

Chef at G Pousada, 1 Michelin Star
Óscar Gonçalves, known professionally as Óscar Geadas, is a 44-year-old chef from Bragança who has become an absolute reference in northern Portuguese cuisine. Born into a culinary family, he grew up in his parents' restaurant – the famous Geadas – where his mother worked as a cook, nurturing his passion for gastronomy from a very young age.
After graduating in kitchen management and production, Geadas honed his skills working in various establishments before taking the helm at G Pousada, the restaurant within Pousada de São Bartolomeu in Bragança. Working alongside his brother António, who supervises the dining room and acts as sommelier, Óscar has created a culinary program that reveals the authentic flavors of Trás-os-Montes region in a deep and meaningful way.
His dedication to modern cuisine using regional products was recognized in 2019 when G Pousada earned a Michelin star, marking a significant achievement not only for him personally but also for the gastronomic landscape of northern Portugal. Geadas takes diners on a journey through the best flavors of Portugal, bridging the gap between Terra Fria and Terra Quente with his refined gastronomic approach.
Beyond his restaurant work, Óscar has expanded his culinary influence, serving as a jury member on MasterChef 2021 and managing multiple establishments including Bistro Terrace at Quinta do Tedo and Família Geadas gastrobar, cementing his status as one of Portugal's most respected chefs.
