Tiago Bonito represents a new generation of Portuguese chefs who honor tradition while embracing innovation. Born in Montemor-o-Velho, his culinary journey has been shaped by memories of his childhood and a deep connection to Portuguese terroir. His philosophy centers on what he describes as 'sea and fire' - a cuisine that captures the essence of smokehouse techniques, eucalyptus, pine, and vine.

Bonito's career reached new heights when he became Executive Chef at Largo do Paço in Amarante in 2017, successfully maintaining the restaurant's Michelin star that it had held since 2004. At this prestigious establishment within the Casa da Calçada hotel, he championed local produce and developed his distinctive approach to contemporary Portuguese cuisine, balancing traditional elements like suckling pig with modern techniques and presentations.

In his most personal culinary adventure, Bonito now leads Éon restaurant at the elegant Palacete Severo in Porto. This sophisticated dining destination, which earned its first Michelin star in 2026, represents his most intimate expression of Portuguese gastronomy. The restaurant features an elegant bar area for aperitifs before guests move to the main dining room, where each creation tells a story inspired by his experiences and encounters throughout his culinary journey.

Known for his relentless pursuit of gastronomic excellence, Bonito offers diners an unforgettable sensory journey that showcases Portugal's rich culinary heritage while pushing the boundaries of contemporary fine dining. His work at Éon has established him as one of the most outstanding chefs to emerge from Portugal's vibrant culinary scene.
