Born in Setúbal, David Jesus has emerged as one of Portugal's most innovative culinary voices, redefining contemporary Portuguese gastronomy through his plant-based philosophy and technical precision. His culinary journey began at the prestigious Estoril Hotel and Tourism School, setting the foundation for a career marked by relentless pursuit of excellence and creative innovation.
Jesus honed his skills in some of the world's most acclaimed kitchens, including three-Michelin-starred establishments DiverXO in Madrid and Quique Dacosta in Dénia, Spain, as well as the Michelin-starred Feitoria in Lisbon. This international experience shaped his understanding of avant-garde techniques and global culinary trends, which he would later integrate into his distinctly Portuguese approach.
From 2011 to 2022, Jesus served as Head Chef at Belcanto in Lisbon, where he played a pivotal role in the restaurant's rise to international acclaim, helping secure its two Michelin stars and position on The World's 50 Best Restaurants list. His tenure at Belcanto established him as a master of modern Portuguese cuisine, blending traditional flavors with contemporary techniques.
In a bold departure from conventional fine dining, Jesus opened Seiva in Leça da Palmeira, Porto, focusing exclusively on plant-based cuisine. The restaurant represents his vision of sustainable gastronomy, where vegetables and seasonal ingredients take center stage. Through Seiva, Jesus demonstrates that vegetarian cuisine can achieve the same level of sophistication and creativity as traditional fine dining, earning recognition from the Michelin Guide for his innovative approach to plant-based gastronomy.
