German-born chef Joachim Koerper has become one of Portugal's most celebrated culinary figures, earning the distinction of being Lisbon's only Michelin-starred chef. His journey began over 50 years ago as an apprentice cook in Konstance, Germany, where he famously almost quit on his first day after peeling 30 kilos of onions. This humble beginning would eventually lead to an extraordinary career spanning across Europe and South America.
Koerper's culinary odyssey took him through France, Spain, and Brazil, where he honed his craft and developed his signature Mediterranean style. In the 1970s, he traveled extensively through southern Europe, becoming a master of Mediterranean cuisine. His talent was first recognized with a Michelin star at Girasol in Spain, before he made the pivotal decision to settle in Portugal in 2004.
Since November 2004, Koerper has served as Executive Chef and partner at Eleven, the acclaimed restaurant overlooking Lisbon's Eduardo VII Park. Under his leadership, Eleven earned its Michelin star in less than a year, cementing his reputation as a culinary virtuoso. His cooking philosophy centers on what he calls 'author cuisine, Mediterranean style,' working exclusively with seasonal products and drawing inspiration from the rich biodiversity of Portuguese terroir.
Known for his signature lobster dishes and innovative approach to Mediterranean flavors, Koerper has expanded his influence beyond Eleven. He has collaborated with establishments in the Alentejo region, creating finessed cuisine rooted in local traditions while maintaining his distinctive Mediterranean touch. His passion for the tastes, colors, and aromas of southern European produce continues to define his culinary identity, making him a bridge between his German heritage and his adopted Portuguese home.
